These are a favorite alternative to cookies and sweets and we LOVE them. Energy balls or bites are all over the internet with different variations of recipes. I grabbed a recipe from Chef Savvy and put my own twist on it with white chocolate chips and blue and red sprinkles for the 4th. They’re great to serve as a snack and can be dressed up with sprinkles for holidays or birthday parties to make them more fun.
Here’s what you need:
2/3 cup peanut butter
1/2 cup semi-sweet chocolate chips
1 cup old fashioned oats
1/2 cup ground flax seeds
2 tablespoons of honey
Mix it all up in a bowl and pop it in the refrigerator for a little while to firm up the mixture so it’s easy to roll into balls.
Tip: If you store them in the fridge after they’re rolled they will stay firm enough to stick a popsicle stick in and the kids think they’re eating cake pops from Starbucks. And obviously, if you skip the white chocolate chips and sprinkles you cut down on the sugar. I’ll use dried cranberries or different nuts for a crunch to get a healthier version.
It’s definitely a healthy alternative to extra sugary treats, requires no baking, with very little clean-up—all music to my ears!
